Cinnamon Bun Clover

Cinnamon buns, cinnamon rolls and cinnamon bread are some of my all-time favourite breakfast and comfort food. I enjoy a light breakfast and while I love bacon and eggs, I would choose cinnamon bun, bread or roll with a cup of coffee over a full breakfast any day of the week. This particular cinnamon bun/bread recipe is much lighter and not as calorie dense as some traditional cinnamon buns. It uses less butter and less sugar overall and it is not as guilty to enjoy as those traditional cinnamon buns.

Try making this recipe with other dried fruit like cranberries, or candied citrus peel for a variety in texture and taste.

Easy Cinnamon Bun Clover Recipe

Prep Time: 2+ hours / Cook Time: 20 min / Servings: 12


For Dough:

  • 3 cups all-purpose flour
  • 1/2 cup warm milk
  • 1/2 cup warm water
  • 1/2 cup raisins (or other dried fruit)
  • 1/4 cup butter
  • 3 tbsp sugar
  • 2 tsp active dry yeast
  • 1 tsp salt
  • 1 large egg

For Cinnamon Sugar:

  • 1/3 cup white sugar
  • 2-3 tsp cinnamon

For Glaze:

  • 2 tbsp sugar
  • 1 tbsp water

For Drizzle:

  • 1/2 cup icing sugar
  • 2-3 tsp milk


  1. Combine warm milk, water, sugar and yeast and let sit for 5-10 minutes until foamy
  2. Using a stand mixer fitted with the dough hook; place yeasted liquid into mixing bowl then add butter, eggs, salt and flour and knead until a sticky dough is form
  3. Add raisins and continue kneading until the dough is slightly sticky and springs back when poked with finger
  4. On a lightly floured surface knead the dough by hands for about a minute
  5. Lightly oil a large bowl and roll the dough inside the bowl a few times to lightly cover the dough with oil, then loosely cover with plastic wrap and/or tea towel and let proof in warm spot for an hour or when dough doubles in size
  6. Punch down the dough and divide it into twelve equal parts, then divide each part into 3
  7. Combine cinnamon and sugar in a bowl, and toss 3 pieces at a time to coat the tidbits with cinnamon sugar
  8. Lightly oil muffin tin and place 3 pieces of cinnamon sugar covered dough into each slot to make a 3-leaf clover
  9. Sprinkle a bit more cinnamon sugar on top
  10. Cover with plastic wrap and/or tea towel and let proof for another hour
  11. Preheat oven to 350 degrees F
  12. Bake for 20 minutes or until golden brown
  13. Mix water and sugar to make a glaze, and immediately after removing cinnamon bun tidbits from oven lightly brush on the glaze
  14. Turn out buns on to a cooling rack and let cool completely.
  15. Mix icing sugar and milk and drizzle on to buns
