Quinoa Bean Salad

Easy Quinoa Bean Salad Recipe


  • 1 can black or dark red kidney beans, rinsed
  • 1 can corn, rinsed
  • 1 cup cooked quinoa, cooled
  • 1 tomato, diced
  • 1/4 cup cilantro, chopped
  • 1/4 finely diced onion, more to preference
  • 1 lime, juiced
  • 1 tsp cumin
  • 4 tbsp red wine vinegar
  • 2 tbsp olive oil
  • 1 tsp salt
  • 2 tsp sugar


  1. Cook quinoa, and the easiest method is steaming using automatic rice steamer: 1 part quinoa to 2 parts water
  2. Combine all ingredients and mix thoroughly
  3. Refrigerate and let all flavours infuse overnight
  4. Serve chilled or heat in microwave for up to 60 seconds for a warm quinoa bean salad
